About Express Bao Buns
“Our whole piglet was one of the first and best dishes we put on the menu,” says Flesh & Buns’ Tanith West, “originally, diners would get an entire pig to carve up and stuff into soft hirata buns. Our piglet belly buns are an homage to that feasting style, but using just the pork belly,” Drawing on the classic flavour combination of pork and apple, succulent, crispy-skinned British pork belly is paired with sweet-sharp pickled green apple. The meat is drizzled with an umami miso and Japanese mustard (karashi) sauce and sandwiched into fluffy steamed bao buns with the pickles.
For the crispy duck buns, the team confits British duck legs until soft and tender. The meat is then pan-seared to achieve a crispy skin, before being shredded and stuffed into the steamed buns. In a nod to Chinese crispy duck pancakes, the duck is paired with the restaurant’s sweet, house-made plum sauce, along with tangy beetroot pickle.
