Bistecca alla Fiorentina

Begin with sourdough and smoked mackerel pâté topped with seaweed and pimentón powder, and tangy-sweet pickled cucumber. Next, Paul’s beef short rib is brined for 24 hours, then slow-braised in duck fat until meltingly tender. It’s served with indulgent mashed potato enriched with horseradish and Cornish clotted cream, topped with crispy fried onions, and finished with a rich red wine jus made from veal stock. On the side, Paul reinvents cauliflower cheese: florets are topped with a cheesy rarebit mix and grilled until golden and bubbling.

Slow-braised Short Rib

Atul’s elevated Indian feast opens with juicy seared scallops, basted in butter flavoured with coriander seed, chilli, confit garlic and lime, and served with a silky masala chickpea purée. There’s also his famous chicken tikka pie with berry chutney – “One of my classic dishes,” Atul says. “I’ve been cooking it for 25 years!” For the main event, a beautifully tender haunch of venison comes with a rich bhuna sauce made with crushed juniper berries and garam masala, with masala-spiced potatoes and a beetroot and coconut poriyal on the side. Finish on a sweet note with chai bhapa doi – a Kolkata-style steamed yoghurt pudding – topped with crunchy hazelnuts.
