ST. JOHN'S HOUSE WINES
St. JOHN Crémant de Limoux 2019
FRESH – CITRUS – APPLE - ELEGANT
St. JOHN worked with talented winemaker Françoise Antech to create this crémant. It is aged on lees for two years – a maturing process which is also used for Champagne, giving it those same deep flavours, but with green apple aromas and a freshness that makes it easy to drink, without being harsh.
St. JOHN Mâcon-Villages 2019
FRESH – WHITE PEACH – AROMATIC - MINERAL
A fresh, clean Burgundy. This is quite restrained on the nose, with ripe yellow fruit and white peach aromatics first off in the glass, then a richness which is balanced against acidity, and notes of apples and pears to finish.
St. JOHN Bien Autre 2018
BLACK FRUIT – TERROIR – PLUSH - BALANCE
St. JOHN blends this Languedoc red from the small volumes of the grape varietals in their own vineyard which will not make a cuvée – but will together make this stunning wine. The backbone of the 2018 is Cabernet Franc and Syrah, with Grenache to finish. It’s rich, but well-balanced between fruit and savoury.
St. JOHN Blanc de Blancs 1er Cru NV
FRESH – ELEGANT – ACACIA - LONG
A rich, silky Champagne with a soft, persistent mousse. This has a lightness that is seldom seen in Blanc de Blancs, which makes it perfect both as an aperitif and with food. Fresh, elegant and lifted with a cleansing minerality, it’s the ideal celebratory bottle.
ST. JOHN WINE PAIRINGS
Château Revelette, Revelette Rouge 2019 ELEGANT – MINERAL – RIPE RED FRUIT - DEEP
Winemaker Peter Fischer uses six varieties in his assemblage for this 2019 Rouge: Syrah, Cabernet Sauvignon, Grenache, Cinsault, Counoise and Carignan. It has soft ripe red fruit notes on the nose and some dry tannins backing the mid-palette fruit, which give the wine both elegance and structure.
St. JOHN says: “The brambly notes pair fantastically with red meat dishes, with a richness, depth and structure that holds its own and underlines 10 Greek Street’s beautiful beef.” For Cafe Murano's Osso Buco Feast
Domaine des Ronces Chalasse 2016
SAVOURY – CITRUS – MINERAL - AROMATIC
This white, which is 30% Savagnin and 70% Chardonnay, is aged in large casks for two years. It has the characteristic earthiness of a Jura wine but is also aromatic and savoury, with fresh mineral undertones.
St. JOHN says: “Murano’s strong flavours of porcini, rosemary, and blue cheese need a savoury white with texture and strength but with a freshness that cuts through and lifts every course.”
Château la Colombière Coste Rouge 2016
SAVOURY – SPICE – CLOVE – PLUSH
This had a long fermentation and was aged in large barrels, producing a fine, elegant and savoury red with hints of spice and clove.
St. JOHN says: “This spicy, refreshing, lighter-style red mirrors Bubala’s masterful use of flavour, providing aromatics which play with, rather than fight, the delights on the plate.”
François Crochet Sancerre Blanc 2020
STEELY – FRESH – PRECISE – AROMATIC
An organic, biodynamic, barrel-aged white in a classic Sancerre style, this is fresh, lively and clean, with a stony delicacy.
St. JOHN says: “Sancerre Blanc is a classic seafood match, and for a good reason - the freshness and aromatics are just perfect. Why argue with perfection?”
